With flames rising and knives slinging, I sat at the hibachi grill in full amazement and awe of what was taking place in front of me. I had never been to a Benihana restaurant before and quickly became enticed with the delicious fresh flavors and thrilling performance the dinner had to offer. I immediately stated that although I spend almost all of my time in a kitchen, I was a bit nervous. Within minutes he had me suited up in a Benihana chef’s coat and hat and eased all of my nerves with his cool and inviting demeanor. My training session began with him showing me how a complete service was done to some of the famous Benihana tricks (the beating fried rice heart, the steaming vegetable train, and the flying lemon ‑ to name a few). After I sampled all of the delectable dishes he had just showed me, it was my turn to take a knife in hand and step behind the grill.
How did I do, you ask? I’m proud to say I did not burn the place down and Chef Lu helped me through it with such ease that I found myself having more fun than anything. My absolute favorite part was learning the secrets to that delicious fried rice and turning a flambé onion into an onion volcano, of course.
