The other day I was at the grocery store just chatting with one of the butchers about meat, bones, and such. You know, the usual afternoon coffee talk. We were talking about how fabulous homemade stock is and she brought up the great point that we don’t get enough gelatin in our diets as we used to. Before we go any further she also stated that chicken feet make the most luxurious chicken stock on this planet because of the amount of collagen, so keep that in mind next time you want to make the perfect stock. Anyway, she made a good point. Gelatin is largely composed of the amino acids glycine and proline, found in the bones, organs, and fibrous tissues of animals and we don’t consume these parts as regularly anymore. But these amino acids are important to our health as they maintain an optimal immune system, are needed for good joint health, and it’s a must for proper hair, skin, and nail growth.
We make homemade stock on a weekly basis so I’m feeling pretty confident we at least get some of the great healthy benefits of gelatin. But I thought to myself, why not boost it up just incase with some “healthy” candy? Sounds great to me. So I searched the internets for the basic formula for do it yourself gummies and went to work. The outcome was horrific! What we got was sweet rubber that tasted like the smells that came from the barn when the farrier came to visit the horse I used to ride at camp. It was not pleasant. We didn’t give up, obviously. With a few tweaks and a serious cut to the amount of gelatin used we now have a sweet, delightful, and somewhat healthy treat without food dyes and additives.

Squeeze the juice from a few blood oranges, in season from winter through late spring.
Combine juice with honey. Then sprinkle with gelatin, whisk to combine, and simmer over medium-low heat until the gelatin dissolves.
Poor into candy molds or into an 8″x 8″ pan. Place in the refrigerator for 15 to 20 minutes until set.
Remove from molds and serve. Cheers!

- 3/4 cup blood orange juice, about 3 blood oranges
- 1 tablespoon lemon juice
- 3 tablespoons pure honey
- 4 tablespoons gelatin powder
- In a saucepan, whisk to combine juices and honey over medium-low heat. Sprinkle gelatin over juice and whisk. Bring to a low simmer and whisk until the gelatin has dissolved completely, about 3 to 5 minutes. Remove from heat.
- Pour into candy molds or into an 8"x8" square baking pan. Place into the refrigerator for 15 to 20 minutes until set. Pop out of molds or if using a baking pan, slice into squares with a knife. Serve. Store in an air-tight container.
