The other day I was skimming through Cooking Light magazine and came across “Sides in Five,” a collection of quick summer side dishes. Quick and summer — yes please! I’ve got a child running around me in a wet bathing suit and a dog that has just jumped in a mud puddle, quick is needed.
This gorgeous Beet Citrus Salad grabbed my attention since every ingredient in it is on my family’s favorites list. Plus it’s so pretty how could one resist? Thankfully, I had roasted some beets a few days ago which did make this quick. The recipe calls for canned beets but I found the roasted beets to be beyond delicious. Anyway, it was a hit and I recommend it or any of those scrumptious recipes from “Sides in Five” in the August 2013, issue of Cooking Light.
